One of the greatest discoveries I have made since I began Paleo is Almond Meal. It is a wonderful nutritious replacement for whole wheat.
Almonds -with the skin- have a lot of benefits for your health. They have Vitamin E and flavonoids: potent antioxidants. These delicacies help to the reduce cholesterol levels, and boost your energy, because they attack the free radicals in your body. Almonds, contribute to the reduction of the inflammation in the arteries. Unpeeled almonds are one of the most nutrient dense nuts.
With such great benefits, and wonderful flavor, I had to integrate the almonds into our lives. So, after a lot of trials, I created this recipe using unpeeled almond flour, for my most important critics, my kids- who love it.
I hope you enjoy it as much as we have:
- 1 cup of raw milk
- 4 medium size eggs
- 1 Tbsp. of baking soda
- 1/3 cup of vanilla extract
- 4 ripped bananas
- 2 cups of
- Pre heat your oven for 5 minutes at 475º C.
- Put all ingredients in the Food Processor and Mix.
- Cover with parchment paper a 9 in. x 13 in Pan.
- Add the Mix to the Pan.
- Cook in the oven at 475ºC for 25 minutes.
After 20 minutes, pinch it with a fork at half of the pan to see if it is dry. Take it out of the oven when dry.
Leave it rest for 2 hours.
Cut it in small pieces –small brownie sizes for children fingers.
Let it cool in the fridge for 3 hours.
