Summertime to me, means spending time with friends outdoors. You can sit around the pool or on the deck chatting for hours. Summer is a time for fun! You don’t want to be in the house preparing a meal when everyone else is outside! With the prep work done ahead of time, this cooks up in just a few minutes. and you have a complete meal. Don’t stress. Enjoy your summer!


Rosemary Marinated Beef Kabobs

Beef Kabobs Paleo

  • 1/3 c. olive oil
  • ½ c. apple cider vinegar
  • 1 Tbsp raw honey or maple syrup (optional)
  • 2 tsp. rosemary (fresh or dry)
  • 1 tsp. thyme (fresh or dry)
  • 1 tsp. minced or dry onion
  • 1 lb. beef cubes
  • 1 medium size pepper (your choice of colour)
  • 1 medium size onion (your choice)
  • 1 small zucchini

Whisk together oil, vinegar, and spices . Reserve ¼ cup of marinade for veggies. Place beef into a glass container and mix together with marinade. Cover and let sit in the fridge for several hours. I like to let mine sit for 12-24 hours. One hour before arranging kabobs, cut veggies into chunks and cover with reserved marinade in a separate container.

If using wooden skewers, soak in water for at least one hour. This helps the wood to not burn too quickly. I have now bought metal skewers, because I would always forget to soak my wooden ones.

Thread meat and veggies onto skewers. Cook on bbq on medium high heat. Cooking time depends on how cooked you would like your beef. Throw away any extra marinade that you had your meat in.

I cook them for about 4-5 minutes per side. Enjoy!

    I just made a recipe with beef and rosemary, but it did seem a little bland. I hadn’t thought to add vinegar. I’m going to try your recipe tomorrow.
